Crock Pot Cowboy Beef

Looking for a meal that satisfies the entire family?  You found it.  It takes about 10 minutes to prepare this meal in the morning and there is zero prep when you are ready to serve.  This crock pot meal is both nutritious and delicious!


  • Chuck roast (approximately 1.5 pounds)
  • Pepper and garlic powder to taste
  • 1 tablespoon olive oil
  • 1 can Rotel (I use mild for the kids)
  • 1 can southwestern corn
  • 1 can chili beans (Again mild, but you can adjust to your liking)
  • 3 chipotle in adobo, pureed, optional
  • Cooked rice
  • Shredded cheese



  1. Trim and cut chuck roast into 5 equal size pieces.  Sprinkle with pepper and garlic powder.
  2. Heat skillet over medium-high heat.  Add olive oil.  Brown chuck roast on all sides, about 1 minute per side.
  3. Place roast in crock pot (cooking spray recommended for easy cleaning).
  4. Open all cans and pour over meat.
  5. Cook on low for 8 hours.
  6. Shred roast pieces and add back to bean, corn, and tomato mixture.
  7. Serve over rice.  Top with shredded cheese. (Use your rice cooker on time delay!)
  8. Chipotle in adobo – is too spicy for my kiddos.  I save it for the end and add to the dish after fixing the kids’ plates.  If your kids are tougher than mine, go ahead and add it at the beginning.  Tip: if you buy the chipotle in adobo can, you can puree the entire can and freeze in an ice cube tray for easy future use.  I use 2 cubes on this size recipe.

Yield: Serves my family of 5 with one leftover portion
