Egg Omelet Muffins

egg omeletProtein.  An important nutrient that seems so hard to get enough of, especially in the mornings.  Add getting three kids ready for school on top of it… might as well just pour the cereal now.  But wait, there is hope!

Make ahead breakfast is something that is new in my household.  However, it put me so far ahead this week I didn’t know what to do with myself for about 30 minutes on Friday.  Longest break I have had since having children.  My current favorite in the make ahead world: egg omelet muffins.  Create your own combination in this easy and delicious recipe.

Need:

  • 8 oz diced ham
  • 1/2 cup of your favorite cheese
  • 8 eggs
  • 6 egg whites
  • 1/4 cup of milk
  • 1 tsp vegetable oil
  • 1/2 tsp baking powder
  • salt and pepper

Grease a muffin/cupcake pan with cooking spray.  Add your diced ham or your favorite toppings.  Add cheese.  In separate bowl, whisk together eggs, egg whites, milk, oil, baking powder, salt and pepper.  Pour into each muffin tin until nearly full.  Bake at 350 degrees for 20-25 minutes.  Make sure they are thoroughly cooked.

Place in a plastic storage container.  Reheat in the microwave for about 30 seconds, depending on your microwave.

My kids have been loving these AND they have been saving me some valuable AM time to get the kids, up ready, to the bus stop, and to school!  They would be perfect for an 8am meet day, after practice snack, or breakfast for dinner.  Hope you enjoy as much as we have!
